WE DON´T JUST MAKE tortillas, WE RECREATE STORIES MADE OF CORN.
COOKING WITH PRODUCE FROM THE YUCATECAN CONUTRYSIDE.
OUR STORY
The “Pancho Maíz” project has been in development since 2019, primarily in response to the underutilization of native corn varieties from the Yucatán Peninsula.
Over time, the project expanded to include other products offered by the milpa (traditional polyculture system) of the southeast, such as various types of beans, tomatoes, sesame seeds, peanuts, jicama, three varieties of hibiscus, sweet potatoes, cilantro, squash, epazote, lettuce, and various corn varieties.
